The distinctive features of the winery
After improving winemaking skills around the world, Paolo Pitzolu decides to return to his native Sardinia and found the Arriali winery in Iglesias (South Sardinia) in 2018. His project is inspired by the garagistic french movement, definitely avant-garde in a context like the sardinian millennial winemaking tradition. To ennoble this historic cultural heritage, Paolo uses viticultural and winemaking techniques tailored to each wine, that extend beyond the borders of Sulcis-Iglesient and embracing the entire Sardinian territory.

Enhancing the peculiarities of each vine
The creation of the wines takes place after selecting the best grapes, combining different vineyards. In fact, the bunches come from different suitable areas of Sardinia where the singularity of each territory, with its own pedo-climatic traits, allows a profound and distinctive personality to be transferred to the final product.

Once the grapes from the various vineyards have been selected, Arriali Winery turns into a wine laboraty where Paolo can best express the finest oenological techniques, tailored for each grape variety, by selecting and utilizing his own indigenous yeasts from his vineyards."

Environment
Arriali and its experimental vineyards are located in Iglesias, in the district of Southern Sardinia; more precisely in the Sulcis area. The name of the winery, as well as that of the wines, recalls its connection with the territory, characterized by the Mistral wind which, passing the mountains and the wonderful cliffs overlooking the sea, brings with it the intense aromas typical of the Mediterranean.

Terroir
The micro-parcels selected by Paolo around Sardinia are located in unique and distinctive ecosystems. Some varieties come from volcanic soils, while others on clay and sand. The salty winds from the nearby sea and the Mediterranean flora , characterize these unique ecosystems.
