Paolo Pitzolu graduated in Agricultural Sciences at the University of Sassari, he chose to major in viticulture and enology at the University of Asti, concluding his curriculum with an International Master in viticulture and enology obtained at the Polytechnic University of Madrid.
After graduating he improved his technical knowledge with real experiences in different production contexts: Italy (Piedmont, Tuscany), France (Saint-Émilion, Pomerol, Châteauneuf-du-Pape) and other countries of the new wine-growing world such as Argentina, Chile, and South Africa.
In 2018 he founded the Arriali winery an oenological project in which wines are produced in small quantities, the result care and meticulous work from the vineyard to the bottle following a selection of the best plots and the most suitable land.
This approach, as the French tradition defines it, follows the philosophy of the ”Vins de garage” and Paolo is considered an exponent of the Italian ”garagist”, a wine artigian.
